PHO BO
Pho bo, or beef noodle soup, is the national dish of Vietnam. The Vietnamese love soup. And it is a dish that transcends regional variation in the cuisines of the nation.While this recipe calls for simple beef stock, you should be aware that the Vietnamese see making beef stock as a fine art that usually involves the use, not just of meat, but of beef bones (and sometimes chicken bones). And their beef stock will itself be well spiced with salt, pepper, sugar, ginger, anise, and other ingredients.
The recipe also calls for fish sauce (nouc mam) and rice noodles. You should be able to obtain both at an Asian grocery.
This recipe takes about 15 minutes of preparation and another hour of cooking time. It serves 8 to 12 people.
