Wheat Noodle in
Coconut Chicken Soup
(Ohnno Kaukswe)Ingredients
2 lb chicken
5 tbsp fish sauce
1 teasp salt
1 tbsp chily powder
1 tbsp oil
1 pc coconut (50 gm of thick coconut milk)
3 boiled eggs
1 lb onion
10 tbsp pea powder
3 lb wheat noodle
How to make
First chop the chicken and clean. Boil chicken and chicken bones with 2 quarts of water. Add fish sauce and boil for about 15 minutes. Drain out soup to a container, and keep the remaining boiled chicken. Peel off the flesh from the bones. Throw away chicken bones.
Heat the pan, and put the chicken into it. After that add oil, salt, chilly powder and fry for 5 minutes. Add coconut milk and pea powder. Remix with the chicken soup. Add 2 more quarts of hot water. Add 1/2 lb of quartered onions to soup. Heat and let it boil for 30 minutes in low heat.Preparation to serve
In each small plates, prepare these on table:
Chilly powder
Boiled egg and remove shell. Slice.
Thinly slice 1/2 lb of onion, wash in water. Drain water.
Dried thick wheat noodle
Serve noodle and soup in separate bowls.
Put some wheat noodles in the bowl, then put the ingredients from above, and put some hot soup. It's delicious!
