The Delicious Mango Jam

A Myanmar saying years, “mango is the best fruits, pork in meat, and tea in leaves”. This proverb indicates that, the mango is the most delicious of all fruits. Among the various of mangoes in Myanmar, Ma-Chit-Su, Sein-Ta-Lone and Shwe-Hin_Thar are the popular strains of mangoes. These are fragrant sweet smelling and delicious to eat.

Some mangoes are stringy, sour, with thin pulp when they are ripe. These types of mangoes are very tasteful when made into jam while they are green. And in this program, we will present to you the way to make delicious, sweet smelling green mango jam.

Using green mangoes is the best, as the seeds haven’t matured yet. The first step is to peel the mango and put it into water to wash out resin. After cutting the mango into four pieces, we have to make sure that the seeds and ovaries are entirely taken out. Then the mango is cut again into small pieces and then immerse in lime solution for one night, which will take out the resin and make the pulp brittle. And to reduce the acidity, we have to wash the mango in lime solution and wash it in water again and again and then leave it to drain.

After that, mix the pulp of the mangoes and sugar together. When the sugar has melted after being heated, pieces of mango pulp are thoroughly stirred. After sugar has become sticky and the mango has become tender, it will be become changed into light green colour. Then, you can take it from the oven. And now, we have delicious mango jam.

Then the jam is packed in airtight plastic bags and boxes. You can make this delicious and appetizing green mango jam yourself in March, which is the beginning of mango season in Myanmar.
